Who doesn’t love a delicious muffin recipe as a snack! Blueberry muffins are a childhood favourite of mine so I wanted to make a healthy version of traditional muffins. These delicious & wholesome muffins are made higher fibre, lower sugar & more protein than what typical muffins are (plus they’re toddler approved!). The additional fibre and protein plus lower sugar content mean that you’ll stay fuller for longer and reduce those pesky sugar cravings! I like 1 muffin as a snack choice or 1-2 muffins + 2 boiled eggs for breaky (the addition of the eggs with the muffin at breaky adds more protein and fat to keep you full and satisfied until your next meal). My friends call me the cheese platter queen and I’ll happily take that title. My mum has been making EPIC cheese platters for as long as I can remember and I’ve grown up happily munching on them. The key to an epic cheese platter however is to get the perfect mix of ingredients so it’s not only tasty but also healthy. Thanks mum for teaching me the art of the perfect platter!
