Red Velvet Protein Waffles

I found this amazing jar of red velvet latte powder at my local The Source Bulk Foods and knew I had to create something delicious with it (besides the usual red velvet cupcakes). The powder contains beetroot powder, turmeric, cardamom, ginger, vanilla and cayenne pepper. It’s wonderful served either cold or warm as a velvet latte or used in baking too.

Ingredients

  • 1 cup self raising wholemeal flour
  • 1/2 cup vanilla protein powder
  • 2 eggs
  • 1 cup of skim milk
  • 2 tsp red velvet powder*
  • 1/4-1/2 cup water

Instructions

  1. Turn waffle iron on and spray with oil
  2. Place all the dry ingredients into a bowl
  3. Add wet ingredients and stir until just combine
  4. Place 1/4 of the mixture into a hot waffle maker - cook as per normal waffles
  5. Repeat for remaining mixture
  6. Any uneaten waffles (yeah right!) can store in the fridge for 2 days
  7. I topped mine with blueberries and chia seeds but you can also add yoghurt, nuts or other seeds and fruit
