This has been my morning tea snack option for the past 2 weeks. I must admit, I’m obsessed! My slice is packed full of nourishing ingredients and has the perfect amount of fibre, protein and healthy fats to keep you feeling full all morning long. I used my favourite high protein, low lactose yoghurt (YoPRO) in the slice too as the vanilla flavour is SO tasty! It makes quite a lot (32 slices in fact!) so perhaps half the amount the time first time if you don’t want that many slices. Ingredients

  • 1.5 cups vanilla high protein strained yoghurt (I used YoPRO brand)
  • 2 eggs
  • 1/3 cup skim milk
  • 1 cup almond meal
  • 3 cups rolled oats
  • 1 cup vanilla protein powder
  • 1/2 cup shredded coconut
  • 1/4 cup chia seeds
  • 1 tsp salt
  • 1 cup tahini
  • 1/2 cup dark choc chips

Instructions

  1. Pre heat oven to 180 degrees Celsius 
  2. In a bowl, mix all the wet ingredients (yoghurt, eggs and milk). 
  3. In a seperate large bowl, mix the dry ingredients (almond meal, oats, protein powder, coconut, chia seeds, salt). 
  4. Combine the dry and wet bowls together and stir until combined 
  5. Add the tahini and stir until combined 
  6. Line 2 x brownie tins with baking paper 
  7. Divide the mixture in half between both brownie tins. Press down the mixture with the back of a spoon until it’s even in the dish. 
  8. Bake for 20-25 minutes or until brown on top and cooked through 
  9. Remove from oven and allow to cool
  10. Melt the choc chips in the microwave and drizzle over the bars 
  11. Refrigerate for 15 minute until the chocolate sets.
  12. Slice into 32 bars and store in the fridge for up to a week.

Does this slice freeze well? …I’m not sure I can get through 32 slices in. A week

Yes it freezes ok but I’d recommend just halving the ingredients the first time you make it 🙂
