This has been my morning tea snack option for the past 2 weeks. I must admit, I’m obsessed! My slice is packed full of nourishing ingredients and has the perfect amount of fibre, protein and healthy fats to keep you feeling full all morning long. It makes quite a lot (32 slices in fact!) so perhaps half the amount the time first time if you don’t want that many slices. Literally you should have every ingredient in your pantry for these ones (especially if you’re a peanut butter fan like me!). You don’t even need your blender for these ones which is the best part! This is a delicious healthier alternative to a shop bought cake. It uses some of my favourite ingredients and it’s one of my top recipes to whip up if I have friends over for coffee. If you don’t want to add the frosting you can just add a dollop of yoghurt to it instead. If there are any leftovers it will keep in the fridge for a few days in an air tight container or you can even freeze a few slices (I recommend not frosting it if you are going to freeze it).
